Sweet Corn and Green Peas Curry

Sweet Corn Curry

Ingredients

  • Sweet corn kernels - 2 cups 
  • Green peas- 1 cup
  • Oil / butter- 1 1/2 tbsps
  • Onion - 1, large, finely chopped
  • Green chilies paste
  • Ginger garlic paste - 1 tsp
  • Kasuri methi - 1 tsp
  • Turmeric powder - 1/4 tsp
  • Coriander powder - 1 1/2 tsps
  • Garam masala powder - 1/4 tsp
  • Tomatoes - 2, finely chopped
  • Cashew nuts 4-5 smooth paste
  • Coriander leaves - finely chopped
  • Fresh cream - 1 tbsp
  • Salt to taste

Steps

1. Heat oil/butter in a cooking vessel. Once hot, add the onions and saute till transparent. Add green chilly paste and ginger garlic paste and saute for 3 min. on low to medium flame. Add Green peas and saute for 5 min.

2. Add kasuri methi, turmeric powder, coriander powder, cumin powder and salt. Mix. 

3. Add the tomatoes and saute till oil separates. Add corn and mix. Cook for 4-5 min. 

4. Add  11/2 cups water and boil. 

5. Add garam masala powder, cashew nut paste and mix. Cook for 2 min. Add fresh cream and mix continuously for a minute. on low flame. Turn off heat.

6. Garnish with coriander leaves and serve with Roti or Rice.
